The Senior Director of Revenue directs and oversees all aspects of the organization’s food and beverage services and the gift shop in the Welcome Center. Duties include special event planning, menu planning and costs, preparation and presentation of food and drinks, and adherence to quality and safety standards.
Essential Duties and Responsibilities:
Plan and direct the functions of administration and planning of the Revenue Department to meet the daily needs of the operation while leaving no room to question the integrity of the park or its staff.
Responsible for recruiting, hiring, orientating & training, assigning, scheduling, coaching, counseling, and disciplining employees; communicating job expectations, planning, monitoring, appraising, and reviewing job contributions; planning and reviewing compensation actions, enforcing policies and procedures
Plans and administers a training and development program within the department, which will provide well- trained employees at all levels and permit advancement for those persons qualified and interested in career development
Manage and recommend inventory items for sale in the Welcome Center Gift Shop
Achieves operational objectives by contributing information and recommendations to strategic plans and reviews; preparing and completing action plans; implementing production, productivity, quality, and customer service standards; resolving problems; completing audits; identifying trends; determining system improvements; implementing change
Meets food and beverage financial objectives by forecasting requirements; preparing an annual budget; scheduling expenditures; analyzing variances; initiating corrective actions
Controls food and beverage costs by reviewing portion control and quantities of preparation, minimizing waste, and ensuring high quality of preparation; implement effective control of food, beverage and labor costs among all sub departments
Assist all managers in establishing and achieving predetermined profit objectives and desired standards on quality of food, service, cleanliness, merchandising and promotion
Regularly review and evaluate the degree of customer acceptance of the individual restaurant and banquet service and recommend new operating and marketing policies whenever declining or constant sales imply dissatisfaction by the customers, a material change in the make-up or the customer market, or a change in the competitive environment
Maintains safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures; complying with legal regulations, securing revenues, and developing and implementing disaster plans
Ensures all operations conform to regulations of the Alcoholic Beverage and Tobacco Commission
Requirements
Education
Bachelor’s Degree preferred
Basic Qualifications and Skills
Minimum 7-10 years’ experience in F&B leadership in a QSR or theme park environment, multi-site and multi-discipline experience is a plus
Demonstrated experience leading teams to achieve and exceed goals
Comprehensive knowledge of food and beverage preparation, service standards, guest relations and etiquette
Prior experience developing and implementing plans to ensure a safe work environment in compliance with appropriate regulations (i.e. – Ergonomics, Emergency Response, Injury and Illness Prevention and Hazard communication plans)
Demonstrated Knowledge and Skills
